The α-amylase activities of Nipponbare and Koshihikari seeds. a The α-amylase in the endosperm of Nipponbare and Koshihikari seeds degrades the starch in the agar plates and thus can be detected as white spots in a dark background after the plates are stained with 0.1 % iodine and 1 % potassium iodide solution for 3 days at 28 °C.
